Abkhazian wine: modern technology and millennia-old tradition

This craft of winemaking in Abkhazia is thriving for a long time. It is also assumed that the Abkhazian wine produced before our era. Skillful tradition of wine making passed on from one generation to another, they can rightly be called secular. Many varieties of grapes grown only here, in places with a favourable subtropical climate. Abkhazian wine in each region of the country differs from wines in other provinces. Abkhaz wineIndividuality varieties due to the fact that once imported into the country types were mixed with local varieties, such as "aasara", "Kacic", etc. In the end it turned out such wines, which was never produced, although they are of famous and popular names, such as "Chkhaveri", "Isabella", "Aligote". They were used for about 8 000 years ago. Such tradition of making wine is still alive, but a way mostly used in the household.

A Few words about the technology

Abkhaz wines now in mass production are manufactured on the latest technologies. The grapes, depending on the varieties, occurs from October to December. Next, the collected grapes are crushed and left in a wooden trough for 3-4 days for fermentation. Then pour contents without any additives in barrels or ceramic amphorae for further aging. Abkhazian wine play an important role in various festivals. For example, for the New year (celebrated by the old Christian calendar from 13th January to 14th) in the evening of the 13th January print out the amphora of wine, a delicious table and be sure to cut the goat. Description of certain Abkhazian wines

• “lyhny” – semi-sweet red wine. Made from grapes "Isabella" from 1962 (has a crepe. 9-11 C);

• “Raded” - natural dry red wine produced from grapes "Isabella"  (has the strength of 10-12 degrees);

• ‘Esher’ - natural red semi-dry wine. Made from grade "Isabella" and other red varieties (has fortress 9-11 C);

• “chlamydia" - sweet red wine made from the cultivar "Isabella" (the fortress has 16 degrees). Produced since 1929. All the wines of Abkhazia unites the unique taste, fresh and light scent.
